We love having kids over for play dates but if they stay for tea knowing what to feed them is always a challenge! These Chicken Lollipops have proved a universal favourite time and time again for play dates or parties. And for some unexplained reason when you put food on a stick kids love it even more!

Ingredients
- 2 chicken breasts
- 1/4 cup coconut flour
- 2 tbs milk
- 2 tbs honey
- 1 egg
- 1/2 cup finely chopped nuts eg peanuts or brazil nuts, if you prefer no nuts you can use parmesan or dessicated coconut
- Pinch Salt and Pepper
- Butter
- New Potatoes optional - to taste
- Spring greens optional - to taste

Instructions
- Pre-heat the oven to 190C (170C fan assisted /gas mark 6)
- Put the coconut flour, salt and pepper on a plate and spread evenly
- Mix the honey, milk and egg in a bowl
- Finely chop your nuts in a food processor or blender (don’t blend for too long or they’ll turn to flour!) then spread them on a plate
- Cut the chicken into strips about 7cm long and 3 cm wide
- Get out your baking tray and line it with foil
- Now you can make your lollipops! First roll a chicken strip in the flour till it is fully coated, then dip it in the egg mixture so it is all sticky and finally roll it in the nuts.Place each strip on the baking tray until all your strips are done
- Bake in the oven for 20-25 minutes until golden and cooked through
- While the chicken is cooking, cook the new potatoes in boiling water for 20 minutes and steam the spring greens on top of the potatoes for the last 10-13 minutes
- Once the chicken is cooked and cool enough to touch, thread the pieces onto the wooden skewers to turn them into lollipops
