We all know breakfast is the most important meal of the day and that’s especially true for kids but the standard healthy Weetabix and porridge breakfasts sometimes just don’t cut the mustard.
A great breakfast recipe for kids
So we wanted to find a deliciously fun breakfast that made a great weekend treat but still ticked the healthy boxes and we think we found it! These banana and oat pancakes are an absolute winner of breakfast recipes for kids in the Little Cooks Co households. They are quick to make, yummy to eat, super healthy and even the smallest little cook can enjoy them.
Our littlest was gumming them from 8 months old. Serve them with creme fraiche and berries or extra slices of banana.
For those with a sweet tooth you could drizzle honey or maple syrup on top. We like to use our fruit to make funny faces, why not see who can make the best face?
Also oats have the highest amount of soluble fibre of any grain so they help your tummy feel fuller for longer!

- 1/2 cup oats
- 1/4 cup milk
- 1 egg
- 1 large banana
- 1 teaspoon cinnamon
- 1 teaspoon coconut oil for cooking
- your choice of toppings
Ingredients

- Put all the ingredients apart from the coconut oil into your food processor or blender and blend until the mixture is smooth
- Leave to stand for a few minutes
- Heat the coconut oil in a large frying pan on a low to medium heat
- Pour 6 blobs of pancake mixture into the frying pan, or as many as you can fit depending on the size of your pan
- Cook for 3-4 minutes then flip over and cook for 3-4 minutes on the other side, then serve
- Serve with your choice of toppings
