Soak uncooked quinoa in a bowl of water for 6+ hours (overnight is easiest)
Preheat your oven to 180 oC (160 oC fan assisted/gas mark 4)
Thoroughly rinse your soaked quinoa in a sieve, then add it to a blender with all of the other crust ingredients and blend on high until smooth and creamy (this can take a few minutes)
It should resemble a smooth thick pancake batter – if it looks too thick just add a little more water and whizz again
Cut a piece of parchment paper big enough to cover you baking tray and grease with a little olive oil to avoid the pizza base sticking.
Pour your pizza dough mixture onto the middle of the baking tray and use a spatula to shape it into your pizza base. NOTE: this shouldn’t be too thick, about 0.5cm, just like a pizza!
Cook in the oven for around 15 minutes until slightly golden and the edges have started to curl up a little. When you lift it from the parchment paper it shouldn’t stick though you may need to use a spatula to help separate it. If it is sticking pop it back in the oven for a few more minutes and then try again.
Flip it over and cook for another 10-15 minutes until golden.
While your pizza base is cooking get help from an adult to chop all the ingredients you have chosen to create your rainbow topping.
Remove your pizza from the oven and use the parchment paper to lift it off the baking tray and onto a flat surface. Top it with the passata followed by the cheese, then use your chopped vegetables to create your rainbow.
Carefully lift the parchment paper with your rainbow pizza back onto the baking tray and cook for a further 10 minutes until the cheese has melted. Don’t forget to take a picture of your masterpiece so you can show all of your friends what you created.
